We had a soup-er day in P7 on Thursday! As our topic is the Potato Famine, we wanted to make something using potatoes. We decided on Leek and Potato soup, using leeks from Mr Lyttle's farm (via Tesco). The children helped peel, chop and rinse the veg before we sweated the leeks, added the potatoes and stock. The smell wafted all the way down the corridor! Finally, we blended the soup before enjoying it. It was absolutely delicious and most of the kids wanted the recipe to take home which is a good sign!
